3. Reduce heat to minimum and cook apples and lemon for about 10 minutes.
4. Gently, little by little, pour sugar into the pan, stirring the jam, but so as to preserve the integrity of the fruit.
5. Reduce the heat to medium and cook the jam until thickened for 10-15 minutes.
