Simple recipe

3. While the syrup is boiling, sort out the currants, wash, if necessary, cut off the tails, then dry or simply shake in a colander over the sink.
4. Pour the currants into the syrup and cook for 5 minutes after the first bubbles appear.
5. When boiling the jam, remove the foam and stir gently so that the berries do not fall apart.
6. Pour hot currant jam into sterilized jars straight from the pan / basin with a ladle, placing a plate under the jar.

Five-minute recipe suggests a slightly different method of cooking: the berries are covered with sugar, after a few hours they let the juice in and heat up for 5 minutes, then cool down at air temperature for 4-5 hours. Then the procedure is repeated a couple of times. This method is more gentle on berry vitamins, but it takes much more time.
