Still, we are used to frying chanterelles with potatoes - in fact, this is a classic dish of chanterelles. But rest assured - chanterelles are very pleasant in the soup and easily (unlike many oily mushrooms, for example) combine with other foods in the soup. You can cook cheese soup with chanterelles using melted cheese or several types of cheese at once, then croutons are served with the soup. You will get a very deep taste if you cook soup with chanterelles on beef broth, preferably with bone. You can cook it lighter and use chicken for the meat component of the mushroom soup.

Even frozen chanterelles are perfect for soup - do not hesitate, if the freezing is of good quality, the soup will be fragrant and tasty, like fresh mushrooms!
