The bitter taste in sausages can also be due to the use of offal, such as beef and pork liver. Contrary to popular belief, Soviet GOSTs allowed the use in the production of sausages and sausages of category 1 and 2 offal and other meat substitutes, including soy protein (GOST 23670-79). Now manufacturers may not comply with GOSTs and TUs at all, using cheap raw materials to reduce costs. The addition of large amounts of beef liver, and especially pork liver, which has a bitter taste, is often the reason for the unpleasant taste of sausages.
