One of the reasons for blue discoloration is too long heat exposure. The fact is that vegetable protein is destroyed during prolonged cooking of butter oil, and this can lead to a slight bluish tint of the mushrooms.

Another - more common reason - among the collected boletus mushrooms, goats, they are also called kids. It is they who acquire a lilac hue during the cooking process. Edible and unusual, goats even become a decoration of the dish.
