Why are boletuses bitter?

The bitter taste of mushrooms can be caused by a pepper mushroom, which is often confused with boletus due to their external similarity. Pepper mushroom is edible and after boiling it tastes quite pleasant, but some bitterness may remain.

Mushroom lovers sometimes note that boletus tastes bitter after cooking. Many believe that the reason for this is the slimy film on the mushrooms, which they try to thoroughly clean before cooking. Because of this laborious process, some mushroom pickers do not like to collect oil. But the mucus remaining on them during cooking does not affect the bitterness at all, and only makes the marinade viscous.

You can get rid of bitterness without removing the film with a knife, but rinsing the already cooked mushrooms under a good pressure of water.
