Beef liver smells like manure - what to do?

In general, high-quality beef liver should not give off any unpleasant odor. An offal can smell bad in several cases:
- sanitary standards were violated during storage and transportation;
- the liver is old;
- liver from non-castrated bull;
- a liver from an animal that died of a disease.

Eating such a liver is no longer safe in itself (with the exception of point 3). But if there is no other way out, you can try to remove the unpleasant smell and then boil the liver in the usual way.

Several options for how to remove the smell of manure:

The easiest - soak the liver in cold water... The blood remaining in the liver will pass into water, so the fluid needs to be changed several times.

Soak the liver in milk... The liver is the filter of the body, and milk is good for removing toxins. The milk should also be changed 2-3 times.

Soak the liver in waterby dissolving vinegar, salt and sugar in it. Can be left overnight.

The most radical way is soak the offal in a strong solution of potassium permanganate for 15 minutes, then - 30 minutes in milk, then rinse thoroughly with water.

After soaking, the liver is well cleaned of all veins and films, salt and pepper. Prepared with the addition of fragrant herbs and spices so that the finished dish has a pleasant aroma.
