Why are shrimp tough?

Why boiled shrimp turned out tough? This could have happened for one reason: the shrimp were overcooked, spent in hot water for more than the prescribed time.

Any seafood does not tolerate long-term heat treatment, including shrimp. Shrimp, presented on store shelves, is a ready-made semi-finished product in itself. They must be thrown into boiling water and cooked for no more than 3-5 minutes. The liquid is immediately drained after the end of cooking.

The type of shrimp also affects its taste. Large king prawns have tougher meat than their smaller counterparts. Smaller types have more tender meat and contain more iodine.
