Do I need to peel the oil?

All experienced mushroom pickers know that oily caps are covered with a mucous film. And these mushrooms require a thorough, time consuming and rather lengthy cleaning before cooking. This somewhat reduces the popularity of butter oils, although they have excellent taste. But is it really necessary to peel off an oily skin?

The fact is that the slippery film on the surface of the butter caps not only protects the mushrooms from drying out, but also collects radiation, harmful substances, and debris. Therefore, if you are convinced of the environmental friendliness of the collection site, then it is not necessary to clean the film, you just need to remove the dirt from the cap. For example, any store-bought butter - pickled or frozen - always with a hat, since quality standards assume maximum safety and without peeling.

But if you bought mushrooms at the market or near a forest road, and you do not know their origin, you must remove the oil "peel" before cooking and right... Otherwise, you risk your health.
