The optimal time for soaking beans is 6-10 hours. If this interval is exceeded, the beans may ferment: the water in which they are soaked will become cloudy, foam forms on the surface, and an unpleasant sour smell will appear.

The only thing you can do with fermented beans is to put them in the bin. Poisoning can result from eating spoiled beans, so it's best not to risk it. In addition, fermentation negatively affects the taste of the product. Even if you rinse and boil fermented beans well (because it's a pity) - most likely, they won't make a tasty dish. It's better re-cook the beans taking young cereals.

To prevent the beans from fermenting when soaked, you should try to change the water every 2-3 hours. If this is not possible, and if the room is hot, it is better to put the container with beans in the refrigerator.
