The stomachs are sold unfilled (gutted) and the precleaning has already been done. But it is performed mechanically, so parts that are unsuitable for food remain. They need to be removed.

1. Thoroughly wash each stomach separately under running water.
2. The layer of fat and film covering the navels should be completely cut off or scraped off with a knife.
3. Examine each carefully: are there any yellow or yellow-green pieces of muscle tissue. Be sure to cut them off, otherwise the prepared dish will taste bitter.
4. Remove the cartilage from the edge of the stomach. It is easily cut with a knife.
5. On the inside of the stomach there is a special hard film (membrane). It is thick and sturdy. It needs to be removed. This is most conveniently done with a raw product. Pry over the edge with your finger or knife, gently pull off. Rinse again with water.
