How to cook yuanxiao
1. Grind rice in a blender or coffee grinder until flour, sift.
2. Grind peanuts, almonds, walnuts, dried apricots, raisins and dates in a blender one by one, arrange in separate cups.
3. Powder the brown sugar with a mortar.
4. In separate cups mix peanuts with raisins, walnuts with dates, almonds with dried apricots, add a pinch of vanilla sugar and a teaspoon of powdered brown sugar to each bowl.
5. Soften butter in a warm place, distribute into cups with dried fruits and nuts, mix thoroughly.
6. Gradually pour 0.3 liters of boiling water into the rice flour, add the remaining powdered sugar, stir the dough for 5 minutes until a tight consistency.
7. Divide the dough into three parts and place them in separate cups.
8. Pour a teaspoon of juice into each cup, knead the dough so that it is evenly colored.
9. Roll out the dough into sausages about 2 centimeters wide.
10. Cut the sausages into 6 pieces, roll each into flat cakes.
11. Put the filling in the center of the cakes, mold the balls.
12. Dip each ball in water and roll in rice flour several times.
13. Squeeze juice from oranges.
14. In a saucepan, combine water and orange juice with the pulp.
15. Peel and finely grate the ginger.
16. Pour a bag of vanilla sugar, grated ginger, cinnamon stick and star anise into a saucepan.
17. Put the saucepan on the burner, bring to a boil over high heat.
18. Put the rice balls in a saucepan, wait until they come up, and leave on low heat for a few more minutes.
19. You can serve the balls by placing them in orange juice.
